  • 6 to 8 lg. potatoes
  • 2 to 3 hard boiled eggs
  • White vinegar
  • Bacon and bacon drippings
  • Salt and pepper
GERMAN POTATO SALAD INSTRUCTIONS
First of all boil potatoes until they can be easily priced by a fork. And then peel and slice potatoes. Add sliced hard boiled eggs. Next is to crumble four strips of bacon over mixture.
Save bacon drippings and mix with an equal amount of white vinegar. Pour this over potatoes, eggs and bacon. Mixture should be moist. Salt and pepper to taste. Serve warm...enjoy the potato salad !

Ingredient amounts can be altered to suit individual taste.

GERMAN POTATO SALAD INGREDIENTS
  • 2 lbs. potatoes (6-8)
  • 3/4 c. onions, chopped
  • 8 slices bacon
  • 2 tsp. sugar
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. flour
  • 3 tbsp. wine vinegar
  • Dill for garnish
GERMAN POTATO SALAD INSTRUCTIONS
Bring potatoes to a boil. Then cover and simmer for 20-25 minutes. Drain potatoes and cool. Cut bacon into 1 inch slices, cook until crisp in large skillet. Remove bacon to cool and drain on a paper towel. Leave 2 tablespoons bacon fat in skillet. Add onion and cook until soft (about 5 minutes).

Add sugar, salt, pepper and flour, blend well. Slowly add vinegar and 1/2 cup water. Stir until sauce thickens and begins boiling. Add potatoes and bacon. Heat thoroughly. Transfer to serving platter and garnish with dill. Approximately 6 servings...enjoy the salad !

  • 8 medium potatoes
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 6 to 8 slices bacon, fried crisp
  • 3 tablespoons flour
  • 1/2 cup cider vinegar
  • 1/2 cup sugar
  • 1 cup water
  • 1/2 tsp. celery seed
GERMAN POTATO SALAD INSTRUCTIONS
Peel and dice and boil potatoes until fork tender. Sauté bacon and drain on paper towels.
In the same pan, sauté onions and garlic until translucent. Stir in flour, sugar and celery seed.
Stir until smooth. Add water and vinegar. Simmer until thickened. Add potatoes. Crumble bacon and stir in.
Cover and simmer for 30 minutes on very low heat, stirring occasionally. Serve warm.
Refrigerate leftovers and serve the next day straight from the fridge. Even better the next day!

  • 4 lg. potatoes
  • 4 slices bacon
  • 2 tbsp. minced onion
  • 1/2 c. vinegar
  • 1/4 c. water
  • 1/4 c. sugar

  • 1/4 tsp. pepper
  • 1/2 tsp. dry mustard
  • 1/4 c. chopped parsley
German Potato Salad Instructions
Wash unpeeled potatoes, then boil until tender. Cool slightly then peel and slice. Cut bacon into small pieces and fry crisp. Drain well. Combine onion, vinegar, water, sugar, salt, pepper, and dry mustard together in a large sauce pan. Heat to a boil. Remove from heat and add potatoes, parsley, and bacon. Stir gently with a fork. Heat on low until warmed through. Serves 6 persons....enjoy the German potato salad !

* 1 onion, diced
* 2 cups white sugar

Ingredients

* 6 potatoes
* 4 large eggs
* 1 pound bacon
* 1 medium head escarole
* 1/4 cup apple cider vinegar

INSTRUCTIONS

1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
2. Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
3. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Reserve bacon drippings.
4. Place potatoes in skillet with reserved bacon dripping, fry until heated through. Add escarole, bacon, eggs and vinegar. Cook until escarole becomes wilted and serve warm. The German potato salad is ready to serve...enjoy the salad ! Nice !

Ingredients

* 3 pounds new potatoes
* 1 yellow onion, quartered
* 1/2 pound bacon, diced
* 1 large red onion, diced
* 3/4 cup cider vinegar
* 1 tablespoon mustard seeds
* 1/4 cup canola oil
* Salt and freshly ground pepper
* 8 green onions, thinly sliced
* 1/4 cup chopped fresh parsley leaves

INSTRUCTIONS

Preheat the grill to high. Place potatoes in a large pot with the onion and cover with cold water. Cook, on the grates of the grill, or on a burner, until tender. Drain, discard the onion, and cut the potatoes into cubes when cool enough to handle. Place the potatoes in a large bowl and cover to keep warm.

Place a large saute pan on the grates of the grill. Add the bacon and cook until crisp. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Add the onions to the rendered bacon fat and cook until soft, about 3 to 4 minutes. Carefully add the vinegar and mustard seeds and cook for 2 more minutes. Whisk in the canola oil and season, to taste, with salt and pepper. Add the hot dressing to the potatoes and toss gently to coat. Fold in the green onions and parsley. Season again with salt and pepper, to taste. The German potato salad recipe is ready...enjoy it !
